Place all ingredients (except the coconut oil) in a blender and blend until smooth.
Heat a large frying pan with a tsp of the coconut oil on a medium heat until hot and ladle a good scoop of mixture into the hop pan and cook on each side until nicely browned. Move cooked pancake to a warm plate and repeat until all the mixture is used up.
Serve pancakes with some berries and a big dollop of crème fraiche or Greek yogurt.
